Brazil is the world's largest coffee producer and this Santos bean (named after its port) is considered to be a consistently good Brazilian coffee. The coffee cherries are hand-picked and dry-cured, and the beans are removed from the dried cherries, a method that allows the sweetness of the fruit to be transferred into the cup. This coffee is widely used around the world on its own and in espresso blends.
Acidity may sound unattractive, but let me assure you that acidity is a positive characteristic of coffee flavour, also known as brightness or vibrancy. It adds brilliance to your cup, while coffee with low acidity can seem flat and incomplete.
